Like so many nightly performances at the neighboring Lincoln Center, Center Cut’s cuisine interprets the classics for a modern audience.  The restaurant’s namesake is its extensive assortment of succulent “center cuts” of meat and fish, meanwhile a selection of “Modern Classics” restores familiar, yet almost forgotten names like Steak Oscar, Steak Diane and Steak Rossini to their former grandeur.  It’s classic fare with a contemporary conscience—the beef is naturally and humanely raised (vegetarian-fed and hormone and antibiotic free), the fowl is free-range and the seafood is sustainable.
